Object of supplies:

Market for the supply of foodstuffs and technical assistance to the staff for making meals:

- in cold and / or hot connection,

- in the kitchen of the CPAS de Rochefort,

- with service in the restaurant and / or rooms of the MRS "Résidence Préhyr",

- for all meals of the MRS "Résidence Préhyr", meals delivered at home in cold delivery, meals delivered to schools in hot delivery, meals for the guardhouse of Ciergnon in cold delivery.

The fixed budget principle will be applied by type of service.

To this end, the successful tenderer will have to offer services to effectively and concretely assist the kitchen, and this at all stages of the operation of the restoration activities.

These services must make it possible to reach the optimal level of quality and maintain it over time, in particular through:

- the optimization of purchases of food and food products: selection of quality products, short circuit, bio ...,

- the provision of a powerful and user-friendly computer management software,

- the provision of a computerized catalog of standardized recipes adaptable to the constraints of each,

- the implementation of powerful tools and management indicators,

- control of the cost of production,

- help with the development of menus and dietary variations based on cycles respecting the 4 seasons,

- the formalization of production techniques adapted to the kitchen,

- improving the skills of the kitchen staff,

- the contribution to developing more sustainable food choices,

- respect for food safety: good hygiene practice, HACCP standards, traceability labeling ...

By simply awarding prizes in accordance with these general and specific conditions, any bidder acknowledges that it has inquired about any charges that may be placed upon it to meet the requirements of this contract.

It will consider its impact on compliance and HACCP compliance, hygiene and safety in production, storage and storage facilities.

It will also be responsible for the knowledge of legal techniques and provisions, as well as the supervision of staff directly attached to the kitchens and this, in order to ensure perfect operation and maximum efficiency at the service level.

At the level of supplies (except computer and assistance):

This market includes:

- all food supplies

- the supply of coffee and drinks for the cafeteria,

- drinks for the preparation of dishes (beer, wine ...),

- single-use products for the packaging of meals in cold delivery.

This market does not include:

- cleaning products.

Nevertheless, they must be able to be integrated by the tenderer into the computer program according to management needs.

This contract is concluded for a period of 1 year renewable once under the same conditions as 1.6.2020.
