Kitchen technology.

The canteen of Verkehrsbetriebe Karlsruhe (VBK) is located in Karlsruhe, at the corner of Tullastrasse and Gerwigstrasse. There are several buildings in the immediate vicinity on the site. The building consists of 3 floors, a basement, ground floor and first floor. The ground floor is built over in parts, except above the kitchen itself and above the toilet facilities. There is the flat roof directly above. The dining room does not have a cellar. However, all other rooms on the ground floor are. In the basement there are essentially only warehouses / archives, rooms with technical use and rooms that are used by the kitchen (e.g. cold rooms). The heating center and the water distribution are also available around the basement. The ground floor essentially consists of the kitchen with ancillary rooms, scullery and cooling cells, the dining room / casino with stage, an entrance area with a cafe, a meeting room and a toilet wing. After the renovation, the first floor contains the changing rooms for the kitchen staff, a toilet wing, office space and a ventilation center. The building consists of reinforced concrete / masonry walls, supplemented with drywall. The ceilings of the basement and ground floor are also made of reinforced concrete, stiffened with reinforced concrete beams at heights of approx. 20-60 cm. The ceilings of the upper floor in the area of the personnel area are also made of solid reinforced concrete with beams. Only the dining room has a steel roof structure, as well as stiffening steel structures on the walls for solid construction.

Modernization measure: The previous use of the building as a canteen is retained. By enlarging the kitchen area and redesigning the dining room, profound changes in all technical areas are required. Since the electrical and information technology systems are in poor condition and the new fire protection report also requires new system technology, the building will be largely renovated. The complete kitchen technology, including the kitchen ventilation system and the water and waste water supply will be renewed.
