Project description:
The district of Darmstadt-Dieburg is planning an integrated comprehensive school with 3-course primary and 4-course secondary school, a canteen and a gymnasium on the approx. 27,230 m² site of the Ernst Reuter School in Groß-Umstadt.
Initially, 2 container facilities (interim building) for the secondary level will be built on the existing school grounds and another container facility (interim building) for the primary level will be built on an external site of the parish of St. Wenceslas approx. 250 m away. In these container facilities, school operations will continue during the construction project. The interim buildings each consist of 3-storey container facilities (1 container facility for primary level, 2 container facilities for secondary school). The service life of the interim buildings is expected to be approx. 4-5 years until the completion of the new building.
After the relocation of the school to the interim buildings, the existing buildings will be dismantled except for the large sports hall and the caretaker's building.
After the dismantling work, the new building, the small gymnasium and the outdoor facilities will be built. The new 3-storey building consists of a central access building with entrance area, canteen and Nawi rooms, to which two buildings are adjoined, in which the classrooms (clusters) as well as administration, kitchen and all-day rooms are housed. After completion of the new building, the move from the interim buildings to the new building and the dismantling of the interim buildings will take place.
A development plan is available ("In den Wiesen", as of 31.10.1973).
Planning services kitchen planning:
Specialist planning is required for the planning of the canteen and the kitchen in the new building as well as in the interim building.
1. Surfaces:
General: The space requirements for kitchens, staff rooms, magazines, technical and sanitary facilities as well as the number of meals to be served were determined according to the school building guidelines of the Darmstadt-Dieburg district.
The kitchens for both buildings (interim building, new building) are to be designed according to the "Cook & Hold" principle. This means that food is delivered fully cooked and only kept warm until it is served (warming kitchen).
Interim building: A canteen (approx. 185 m²) with kitchen (approx. 125 m²) is to be planned for the interim buildings. The kitchen and canteen are planned in one of the two container facilities on the school grounds. The capacity of the kitchen has not yet been determined at the current planning stage. However, it is not based on the maximum number of pupils, but will be determined on the basis of current figures or forecasts from the Education Office. In the case of the areas for the interim buildings, adjustments may still be possible according to the users.
New building: A canteen (approx. 432 m²) with kitchen (approx. 246 m²) is also to be planned for the new building. The refectory and kitchen are provided on the ground floor with direct access to the outdoor area. The capacity of the new kitchen was determined to be 515 meals per day; issued in three layers.
New building, teaching kitchen: A teaching kitchen (approx. 75 m²) is to be planned on the ground floor of the new building for cooking lessons. If necessary, this should also be able to be used by a "student company" to host the adjacent kiosk. If the kiosk is managed by a catering company, the teaching kitchen will only be used for teaching at the lower secondary level and as a "cookie baking kitchen" for the primary school. The equipment requirements of the teaching kitchen must be coordinated with the school.

As part of the planning process, interfaces between the kitchen technology systems and the building and the building technology must be coordinated and defined with the commissioned architectural firm and the respective specialist planners.
Furthermore, the planning should be designed in such a way that, after completion of the new building, the inventory installed in the interim building as well as all equipment can be transported as completely as possible into the new building, reinstalled there and reused.
BIM
The new building is a BIM project. Services within the framework of the BIM method as well as defined use cases according to the BIM service description are required.
