Service contract operation Mensa Gemeinschaftsschule Stadt Kraichtal

Framework contract for the management of the cafeteria in the Gemeinschaftsschule Kraichtal-Münzesheim for the school year 2019/2020. Start of service is 11.9.2019.

The cafeteria was planned as a treatment kitchen, so that temperature-decoupled production systems can be implemented. A pure "fresh kitchen" can not be implemented due to the kitchen planning.

Despite the existing possibilities to regenerate the food locally, the Cook & Hold system (delivery of hot food) can be used.

The management of the cafeteria is awarded by the City of Kraichtal as part of a service contract to a food provider with experience in school catering in a foreign direction. The future contractor has to offer lunch and lunch in the cafeteria. The contractor must take over the break sale under a concession. Thus lies the complete processing of the food supply with the future food offerer. The contractor will provide the personnel and will pay the client as a further service billing to the parents or students and possibly other beneficiaries. The cafeteria was planned as a treatment kitchen, so that temperature-decoupled production systems can be implemented. A pure "fresh kitchen" can not be implemented due to the kitchen planning.

The bidder must decide based on the kitchen plans, whether the implementation of his production concept in this cafeteria is possible. The contractor will not make any further investments in the technology. If the contractor requires regenerators or other refrigerators, he must provide them at his own expense.

If the caterer works with a temperature-decoupled system (Cook & Chill system or Cook & Freeze system), it is up to him to what extent he uses these foods and which components he freshly completes on-site. Again, the bidder must decide what is possible in the premises with the existing technology and storage capacity.

Despite the existing possibilities to regenerate the food locally, the Cook & Hold system (delivery of hot food) can be used.
