The University of Calabria, hereinafter referred to as a university, announces a tender for the assignment of the management in concession of the catering service and bar at the student canteens on campus University of Arcavacata dei Rende (CS), including also the supply of machinery, equipment and dishes offered during the technical offer by the competitor as well as the related costs of maintenance, ordinary and extraordinary, on movable and immovable property necessary for the performance of the service, in line with the provisions of the appropriate technical annex to this contract.
This contract has been designed with a view to an optimal quality service, both in terms of hygiene, safety and nutritional and sensory quality, together with the design of an efficient organisation of the university collective catering service (ISO 9001 standard, environmental management systems on a voluntary basis EMAS and ISO 14001, EU Commission communication 302/03, Minimum environmental criteria for the catering service and for the supply of foodstuffs approved by decree of the Ministry of Environment and Territory Protection and the M of 10.3. 2020 published in the General Series OJ No 90 of 4.4.2020). Finally, it was foreseen, at the expense of the operator, the ordinary and extraordinary maintenance, as further specified below, of all the properties for the execution of the service, of the technological plants of relevance of the structure (water, thermal, light, driving force, fixtures in general, wall coverings, floors, painting, sewerage, smoke extraction, etc.) functional to the execution of the service contracted, furniture and equipment, avoiding even in this case, conflicts of competence with service managers and doubts about competence to incur expenses. The duration of the contract was set in six years, a period deemed reasonable for participation in a tendering procedure of such complexity and scope, and above all to allow the contractor to come selected at the end of the procedure, to make a reasonable profit against a uniform service, taking into account the price fixed at the auction basis and, finally, the maintenance burden, ordinary and extraordinary, of the facilities and properties in which the service is provided. The specifications provide for an option to extend the contract term for a further three years.
