Framework contract for the management of the cafeteria in the Kraichtal-Münzesheim community school for the 2019/2020 school year. The service starts on May 4th, 2020.
The cafeteria was planned as a preparation kitchen so that temperature-decoupled production systems can be implemented. A pure "fresh kitchen" cannot be implemented due to the kitchen planning.
Despite the existing possibilities to regenerate the food on site, the Cook & Hold system (delivery of hot dishes) can also be used.
The management of the cafeteria is awarded by the city of Kraichtal as part of a service contract to a food provider with experience in school catering under external control. The future contractor has to offer lunch and snacks in the canteen. The contractor must take over the break sale under a concession. This means that the complete handling of the food supply lies with the future food provider. The contractor provides the personnel and, as an additional service, takes over the billing for the parents or students and, if applicable, other beneficiaries. The bidder must use the kitchen plans to decide whether the implementation of his production concept is possible in this canteen. The contractor will not make any further investments in the technology. If the contractor needs regeneration devices or other cooling devices, he must provide them at his own expense.
If the caterer works with a temperature-decoupled system (Cook & Chill system or Cook & Freeze system), it is up to him to what extent he uses these dishes and which components he freshly completes on site. Here, too, the bidder has to decide what is possible on the premises with the existing technology and storage capacity.
