EUROPEAN OPEN TENDER FOR THE PROCUREMENT OF SCHOOL LUNCH SERVICES WITH REDUCED ENVIRONMENTAL IMPACT (D.M.A.T.T.M 10 MARCH 2020) IN THE MUNICIPALITIES OF ROSIGNANO MARITTIMO, VOLTERRA AND RIPARBELLA – DIVIDED INTO N. 3 LOTS, WITH THE CRITERION OF THE MOST ECONOMICALLY ADVANTAGEOUS OFFER ON THE BASIS OF THE BEST QUALITY / PRICE RATIO

The service has as its object:

1. Global Service: supply of about 930 average cooked meals per day and related services, for primary schools in the area including teachers and educators present at meal time, consisting in the procurement of raw materials, processing and cooking in production centers of the winning company, packaging, transport, administration, re-government, cleaning premises, waste delivery, monitoring and pest control, daily ordering of meals, attendance detection with IT tools (tablet) on the municipal attendance management application. Possible preparation of meals related to unforeseen and unpredictable needs for Civil Protection needs.

2. Project 0/6: supply of food for the direct production of about 580 average daily meals for children up to six years of age, meals produced by the municipal kitchens involved in the aforementioned project; Supply of food for breakfast, meal transport activities, administration, re-government, cleaning of premises and waste disposal, monitoring and combating pests in municipal kitchens, in the refectories of all complexes and in municipal educational facilities 0/6, including outdoor areas, daily ordering of meals, attendance detection with IT tools (tablet) on the municipal attendance management application. Both the services referred to in points 1 and 2 are better identified in the Organizational Sheet No. 1 of the Tender Specifications.

3. Support service of municipal activities in educational services: cleaning activities in the complexes of municipal educational services 0/6 years, custody service for n. 3 municipal kindergartens and activities aimed at ensuring the quality of the meal production service for the 0/6 range, regarding the numerical parameters necessary for production in compliance with current regulations. The services requested are better identified in the organizational sheet n° 2 of the tender specifications; for cleaning services, the CAM referred to in the decree of the Ministry of the Environment and the Protection of the Territory and the Sea of 29/01/2021 must be applied.

The contract concerns the school catering service for pupils and authorized school staff of schools and early childhood services of the Municipalities of Volterra and Castelnuovo di Val di Cecina. The service will be provided in the school complexes of Volterra and Castelnuovo Val di Cecina as indicated in Annex no. 4 "cooking centers and school complexes". Savvies:

- provision of food adequate in quantity and quality, strictly adhering to the dietary tables and menus approved by the A. S. L.

- control of the integrity and expiry date and adequate storage of the same foodstuffs;

- preparation, storage and administration of morning snacks for nurseries, play areas, kindergartens, primary and lower secondary schools (where required);

-preparation, cooking and administration of daily meals with the system at the table at the refectory located inside the school / educational building;

- transport of foodstuffs in plexuses without an internal cooking center;

- equipment of the tables before meals, as well as cleaning and rearranging them at the end of meals, even on several shifts;

- cleaning of dishes, cooking center and existing equipment, as well as rooms and furnishings where soiling and administration of meals is carried out;

-complete and extraordinary sanitization of the premises at the beginning and end of the school year, as well as before the reopening of schools at the end of the Christmas and Easter holidays;

- waste management;

-HACCP procedures and traceability;

The service has as its object:

a. Preparation, transport and distribution of meals and mineral water for pupils and teachers of the Nursery, Kindergarten, Primary and Secondary School of the first degree present in the municipal area.

b. Supply of single-portion snacks for breakfasts in the nursery and kindergarten.

c. Cleaning and execution of ordinary and extraordinary maintenance of the equipment and furnishings supplied to the kitchens, annexed rooms and areas of relevance and refectories. It is up to the Company to clean and sanitize the tables

before eating meals and cleaning them at the end of administration as well as cleaning the refectories.
